Maple & Bacon Glazed Wings

Working for JBS USA, Chef Draz was challenged with the task of developing a menu item in the "snacking" category to be presented to national chain accounts at a large food show.  The item had to incorporate specific products from two different JBS foodservice brands. 

Bring the flavors of all-day breakfast to the snack and appetizer category with Pilgrim’s fully cooked Super Jumbo chicken wings sauced with a spicy maple glaze and coated with Swift fully cooked bacon bits.  They’re savory, sweet, spicy and smoky!

Maple Bacon Glaze                       Yield :1 lb.

            

1 c.       4 ozw.              Swift Fully Cooked Bacon Bits

2 c.      16 ozw.             Maple Flavored Syrup

1 TBS.                           Tabasco or other hot sauce

1 Tsp.                             Salt

½ tsp.                           Onion powder

 

  1. Place bacon bits in a sauce pot over medium-high heat until they begin to sizzle.

  2. Stir while cooking over medium-high heat 2-3 min.

  3. Add maple syrup and bring to a boil.  Cook to reduce until syrup is about ¾ of its original volume.

  4. Season with remaining ingredient and mix well.

  5. Hold hot in a covered container in the steam table until ready to use.

 

Maple & Bacon Glazed Wings               Yield: 1 appetizer portion

 

4 pc.                             Pilgrim’s Super Jumbo Wings (thawed) 

2 oz.                             Maple Bacon Glaze (warm)

  1. Preheat deep fryer to 350F.

  2. Fry chicken wings for 8 min.

  3. Drain chicken wings well and place in a mixing bowl.

  4. Add 2oz. of the glaze to the bowl and mix well to coat the wings.

  5. Plate the wings and pour any remain glaze over.

  6. Garnish with half a small Belgian waffle and pieces of scallion.
