Pepperoni Frittata

Foodservice has been focused on driving breakfast  traffic in recent years.  One strategy for creating diner interest is  developing dishes that feature non-traditional breakfast meats.  We've seen smoked brisket, fried chicken and pulled pork all as center of the plate proteins in breakfast offerings.

Chef Draz was challenged with creating an offering under theme of "Global Breakfast" for a producer of dried sausages.  The item was used in a trend presentation to national chain accounts at a distributor's conference.

​

The creation, a pepperoni frittata, featured the customer's signature sliced pepperoni cooked in an egg frittata with whole milk mozzarella cheese. Tasting size portions of the frittata were topped with marinara sauce and fresh basil.  This breakfast offering bought all the best loved flavors of pizza to the breakfast table.
